Here's a simple and delicious recipe for One-Pan Baked Lemon Garlic Chicken with Vegetables. It pairs well with a simple green salad or some crusty bread. This dish is easy to prepare, uses just one pan for minimal cleanup, and is packed with flavor. 

One-Pan Baked Lemon Garlic Chicken with Vegetables

Ingredients:
  • 4 boneless, skinless chicken breasts (about 600 grams)
  • 400 grams of baby potatoes, halved
  • 250 grams of green beans, trimmed
  • 2 tablespoons (30 ml) olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon (about 3 tablespoons or 45 ml)
  • 1 tablespoon (15 grams) Dijon mustard
  • 1 tablespoon (15 ml) honey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • Lemon slices, for garnish
  • Fresh parsley, chopped, for garnish (optional)


Instructions:

1. Preheat the Oven: Preheat your oven to 200°C.

2. Prepare the Marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, Dijon mustard, honey, thyme, rosemary, salt, and black pepper.

3. Season the Chicken: Place the chicken breasts in a large bowl or a resealable bag. Pour half of the marinade over the chicken and let it marinate for at least 10 minutes.

4. Arrange the Vegetables: In a large baking dish or sheet pan, spread out the baby potatoes and green beans. Drizzle with the remaining marinade and toss to coat evenly.

5. Add the Chicken: Place the marinated chicken breasts on top of the vegetables in the baking dish. If you have any remaining marinade, drizzle it over the chicken and vegetables.

6. Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 75°C and the potatoes are tender.

7. Garnish and Serve: Garnish with lemon slices and fresh parsley before serving.
