I think the Epic of Gilgamesh will be completed WAY before we see another ASOIAF novel

No. There are too many novels out there for one to be "the best novel written". How would you compare this with the shining, lotr, harry potter, or Moby dick? GOT are good novels. Definitely not the best, for me. Might be the best for you tho.

I prefer Game of thrones than LOTR. Quite more interesting characters.
