Recently watched steins;gate and many many people posted comments saying they were going to drop the anime in the first ~6 episodes. Why?

its very subjective, the slow start a bit discouraging, and the series does take its time to set up the plot and characters.

Episode 8 onwards, it kicks off. Sadly, it's a slow burner

Stein's Gate is a terrible anime, mainly due to poor character development and an antagonist who seems like a non-threat.

I tried getting my sister to watch it but she didn't want to watch anymore after 3 episodes. She also kept complaining about the art style, which I absolutely loved(and is loads more normal then the VN art)

It was "big" a decade and a half ago - the new one is more content story but the spark is gone. that's it. everyone that orginally liked it aged out and the people who watch it now have more interesting animes like oshi no ko.
