the best way to have privacy with email (although it's a shit protocol that leaves a lot of metadata behind) is to register your email in a country that is a mortal enemy of yours, such as a chinese email if you're american, or russian email if you're european. etc. law enforcement of those countries will not comply with each other and your data will be (mildly) safer.
