Look into Texhnolyze! It's darker but still chill and a pretty good slow burn.

Not quite like Frieren but a chill anime with lots of emotions and an easy to follow story line would be Fruits Basket (the new one) for me. (You would have to get past the cringe of the first episode tho ^^)
