Easy Homemade Donuts

- 2 cups all-purpose flour
- 2/3 cup granulated sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 3/4 cup milk
- 1/4 cup melted butter
- 1 tsp vanilla extract
- Vegetable oil (for frying)
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
- Prepare the dough: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add wet ingredients: In another bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be thick.
- Roll out the dough: On a lightly floured surface, roll out the dough to about 1/2 inch thick.
- Cut out the donuts: Use a donut cutter (or two round cookie cutters of different sizes) to cut out the donuts. If you don't have a donut cutter, you can simply use a round cookie cutter for the outer circle and a smaller one for the hole in the middle.
- Heat the oil: In a large pot, heat vegetable oil to 350°F (175°C). You want enough oil to submerge the donuts, about 2-3 inches deep.
- Fry the donuts: Carefully drop the donuts into the hot oil, a few at a time, and fry for 2-3 minutes per side, until golden brown. Use a slotted spoon to remove the donuts and place them on a paper towel-lined plate to drain.
- Glaze the donuts (optional): In a small bowl, whisk together the powdered sugar, milk, and vanilla extract. Dip the warm donuts into the glaze and let the excess drip off.
- Serve and enjoy: Let the donuts cool for a few minutes, then serve and enjoy your fresh homemade donuts!
